Cimarrón Reposado is a 100% blue Weber agave tequila from Jalisco, Mexico, aged in oak and bottled at 40% alcohol in a 1-liter bottle.
It is made by master distiller Enrique Fonseca at Tequileña (NOM 1146) in the town of Tequila, from estate agave grown above 4,600 feet in Atotonilco el Alto. The agave is cooked in a low-pressure autoclave, crushed with a screw mill and roller mill and fermented with a proprietary yeast; the spirit is mostly copper column-distilled with a share of pot-still tequila, then rested four to six months in uncharred American white oak.
Expect baked apple, cinnamon, plum and vanilla with a savory, herbal palate. VinePair (Tim McKirdy) gives it 91 points and Wine Enthusiast (Kara Newman) 90. Tequila Matchmaker verified Cimarrón as additive-free in 2021.
