Freixenet is based in Sant Sadurnà d'Anoia, in Penedès, and buys fruit from about 1,200 long-term growers. Cordón Negro was launched in 1974 under José Ferrer. By 1983 it was the top-selling imported sparkling wine in the US, and it is now sold in 130 countries.
It is a D.O. Cava made from Parellada, Macabeo and Xarel·lo. Each grape is fermented separately, then blended and given its second fermentation in the bottle, the traditional method used in Champagne. The producer says it rests at least 12 months on its lees, and the dosage is 9 g/L. It is 11.5% alcohol and listed as vegan.
The producer describes it as crisp and well balanced, with apple, ripe pear and bright citrus, and a long finish with a touch of ginger.
Against Segura Viudas Brut Cava, Freixenet costs less and comes in more sizes, from 187ml to 1.5L; for a party or a round of mimosas, choose Freixenet.
The producer suggests serving it at 6 to 8°C, and the importer suggests drinking it within two to three years.
