The Chavy family held vines in Puligny-Montrachet for generations and sold their grapes until Gérard Chavy began bottling. His holdings were later split between his two sons, and Jean-Louis built a new winery in the center of the village, where he makes the wines.
His village Puligny-Montrachet is blended from about ten small plots of 20- to 60-year-old vines just below the premiers crus, including Les Tremblots, Les Meix and Les Levrons. In other vintages the grapes have been pressed as whole bunches and fermented with indigenous yeasts, without lees stirring, and new oak is kept to around 15 to 20%.
Merchants describe a restrained style with fresh citrus, white peach and pear, a touch of oak spice and a mineral finish.
Against Patriarche Chassagne-Montrachet, Chavy's Puligny is younger, tighter and more mineral; for a classic village Puligny, choose Chavy.
The 2020 has had a few years in bottle. Serve it cool rather than cold, with lobster, turbot, scallops or roast chicken.
