Pasote Reposado is a 100% blue Weber agave tequila from Los Altos, the highlands of Jalisco, Mexico, bottled at 40% alcohol in a 750ml bottle.
Pasote was created by August Sebastiani's 3 Badge Beverage and was first made by Felipe Camarena at El Pandillo (NOM 1579); it is now made under NOM 1584. The agave is cooked in brick ovens and distilled twice, and the tequila rests about six months in American ex-bourbon barrels, three times the legal minimum.
Pasote describes roasted agave with ripe coconut, vanilla and sweet oak, then light caramel, dried fruit and roasted nuts on the palate. Paste's Jim Vorel found grapefruit, roasted orange and salty-sweet agave.
It sits between a bright blanco and the richer Pasote Añejo, and the cork-topped bottle makes a good gift.
