Ziobaffa was co-created by the filmmaker Jason Baffa; the name means Uncle Baffa, a nickname from the shoot of his film Bella Vita. The winemaker is Piergiorgio Castellani of the Castellani wine family, and the wine is bottled at a zero-waste facility in Tuscany.
The grapes come from IGT Terre Siciliane in Sicily, hand-picked around mid-August from hillside vineyards near the Mediterranean on limestone and white-chalk soils. Fermentation is slow and cool in stainless steel, with no oak and no skin contact. The producer labels it organic, non-GMO and vegan, with a Helix twist-off cork. It's 12% alcohol.
The producer describes it as zesty and juicy, with Meyer lemon, Honeycrisp apple, pickled ginger and white stone.
Against Bellissima Zero Sugar Pinot Grigio, Ziobaffa is the Sicilian, steel-fermented bottle at a lower price; for a zesty organic Pinot Grigio under $15, choose Ziobaffa.
Serve it at 50 to 54 °F. The producer pairs it with fish, shellfish, poultry, cream-sauce pasta and soft cheese, or pours it as an aperitif.
