Caymus Napa Valley Cabernet Sauvignon 2023 750ml

Every Caymus Napa Valley Cabernet is pieced together from vineyards in eight of the valley's sixteen sub-appellations, so no single corner of Napa decides the vintage. That blending, plus very ripe picking, is what makes the Caymus style so recognizable.

Charlie and Lorna Wagner founded Caymus in Rutherford in 1972 with their son Chuck, who runs it today with his children. The family farms low-fertility valley-floor and mountain sites, dry-farms some of them, thins the crop and leaves the grapes hanging late.

The result is dark and concentrated, soft on the palate, with enough tannin underneath to age.

Caymus makes two Cabernets under this label: the Napa Valley you see here and the barrel-selected Special Selection. There is also the cheaper Caymus California Cabernet, made from fruit grown outside Napa. For a dinner or a gift, buy the Napa bottle; for a Tuesday, the California one does the job.

Open it half an hour before dinner and pour into a big glass. It handles a ribeye, short ribs or a hard aged cheese.
