Signature is Chappellet's flagship Cabernet, named for the year, 1980, when Donn Chappellet signed the bottle. It has been made every year since 1984 from the estate's best lots on Pritchard Hill.
Donn and Molly Chappellet came to Napa in 1967, and Cyril and Dominic Chappellet run the family winery today. Phillip Corallo-Titus directs winemaking. The 2019 is 77% Cabernet Sauvignon, 12% Petit Verdot, 8% Malbec and 3% Merlot, grown on Pritchard Hill's dry, rocky hillside soils and aged in French oak. It's 14.5% alcohol.
The winery describes a dark, concentrated wine with cassis, dark cherry, plum, chocolate and baking spice, supple tannins and a finish of espresso, cedar and anise.
Jeb Dunnuck called it a candidate for the best Napa Cabernet under $100. Buy it over Silver Oak if you want a mountain wine with more structure.
Decant it for an hour and serve it around 62 to 64°F. It drinks well now and should keep into the mid-2030s.
