Silver Oak ages its Cabernet only in American oak, and it builds those barrels at its own cooperage in Missouri.
This is the winery's Sonoma County Cabernet, from Alexander Valley in the north of the county. The 2020 is 95.2% Cabernet Sauvignon with small amounts of Merlot, Cabernet Franc, Petit Verdot and Malbec, from the Red Tail, Miraval and Geyserville Estate vineyards. Winemaker Nate Weis worked with a warm, dry season that started with early budbreak and gave low yields and concentrated fruit.
Silver Oak describes cedar and concentrated red fruit, polished tannins and a long finish of raspberry, cherry and cola.
Put it next to a French-oaked Napa Cab such as Duckhorn and the difference is obvious: this one is rounder and spicier. If you like that American-oak style, Silver Oak is the bottle to buy.
Decant it for an hour if you open it now, and serve it at cellar temperature, around 60 to 64°F. Lamb chops or a grilled steak suit it best.
More bottles from the county are on our Sonoma County wine page, and every bottle is listed under Cabernet Sauvignon. Pick it up at our Brooklyn store or get same-day delivery across NYC.
