Piper-Heidsieck was founded in Reims in 1785 by Florens-Louis Heidsieck, and since 2011 it has belonged to EPI, the Descours family company that also owns Charles Heidsieck.
Cuvée Brut is the house's flagship non-vintage: 50 to 55% Pinot Noir, 30 to 35% Meunier and 15 to 20% Chardonnay from about 100 crus. At least 30% is reserve wine, drawn from a library of more than 150 wines kept cru by cru. It ages at least two years on the lees and rests six months after disgorgement, and the house puts the dosage at 8 grams per liter.
The house describes pear, white peach, citrus and orange blossom, then toasted bread, fresh almond and mint.
Compared with Veuve Clicquot Yellow Label, Piper is lighter and crisper; as an aperitif, take the Piper.
The house pairs it with steak tartare, young Comté or prawn tagliatelle. Serve it well chilled.
