Bollinger has been in Aÿ since 1829 and is still family-run. Special Cuvée got its name in 1911 from the house's British agent, and it remains the house's signature non-vintage.
It is Pinot Noir-led, 60% with 25% Chardonnay and 15% Meunier, and more than 85% of the fruit is Grand and Premier Cru. Part of the wine is fermented in oak barrels, and Bollinger still employs its own cooper. Reserve wines make up most of the blend, some aged in magnums for years, and the bottles age in the cellar twice as long as the rules require.
The house describes ripe fruit, roasted apple, peach and spice on the nose, then pear, brioche and fresh walnut on a structured, lively palate.
Against Pol Roger Brut Réserve, which is lighter and brighter, Bollinger is the richer, toastier wine; with food, buy Bollinger.
Serve it at 8 to 10°C, the house's advice, with scallops, roast chicken or aged cheese.
