Moët & Chandon launched Ice Impérial in 2011 as the first Champagne made to be drunk over ice, inspired by people in Saint-Tropez adding ice to their glasses.
The blend leans on Pinot Noir, 40 to 50%, with 30 to 40% Meunier and 10 to 20% Chardonnay, and 20 to 30% reserve wines. The dosage is 45 grams per liter, a demi-sec. Benoît Gouez, who created it, says it is meant to taste too intense and sweet on its own, so the melting ice brings it into balance.
It shows tropical fruit like mango and guava, nectarine, raspberry and caramel, finishing on grapefruit and ginger.
If you want a classic Champagne in a flute, take Moët Impérial Brut; for poolside pours or a summer party, choose Ice Impérial.
Fill a large wine glass with three ice cubes and add mint, lime zest, cucumber or a few red berries.
