Nikka Discovery Yoichi Aromatic Yeast Single Malt Japanese Whisky 2022 750ml

In 2022 the Nikka Discovery series looked at yeast. This Yoichi was fermented with a yeast that gives an aroma like ginjo sake, fruity and floral, over Yoichi's familiar smoke from its coal-fired stills.

Yeast is easy to overlook in whisky, but it makes many of the fruity and floral compounds in the spirit. Here those lifted, sake-like notes sit on top of the distillery's robust, smoky base. It's bottled at 48%.
